1 1/2 lbs. ground beef
1 c. black beans, drained and rinsed
1 c. frozen or canned corn, drained
1 c. tomato sauce
1 c. beef broth
1 T. chili powder
1/2 tsp. cumin
1 tsp. salt
1/4 tsp. pepper
1 medium onion, coarsely chopped
1 box Jiffy cornbread mix
1 egg
1/3 c. milk

Directions:
Directions:
Preheat oven to 425ºF. Grease a 3 qt. casserole dish. In a large skillet, saute beef and onion over medium-high heat until meat is brown and onion is translucent, about 10 minutes. Mix spices into tomato sauce, then add to beef and onion mixture. Add remaining ingredients and put all in casserole. Mix Jiffy cornbread by box directions and spread on top of casserole. Bake 20-25 minutes or until cornbread is browned on top.

I love this casserole but Bobby hates beans, which takes a lot out of this recipe in my opinion. I even tried tricking him by liquefying black beans in a blender and mixing into the meat mixture. It still tasted good but I didn't fool Bobby.
