1 tbsp butter or olive oil
2 c. thinly sliced leeks (2 large)
2 tsp minced garlic
4 c. small cauliflower florets
1 1/2 peeled, cubed sweet potato
1 1/2 tsp curry powder
1 tsp ground cumin
4 c. chicken or vegetable broth
salt & pepper to taste
1 c. cooked brown & wild rice blend (can buy rice side dish, make and use part)
1 c. evaporated 2% milk
1/2 c. packed shredded light Swiss Cheese

Directions:

Heat butter in large soup pot over med heat. Add leaks and garlic. Cook & stir about 3 mins.
Stir in cauliflower, sweet potato, curry and cumin. Cook and stir 1 minute. Add broth, salt & pepper. Bring mixture to a boil, reduce heat to low, cover and simmer 12-15 mins. Until veggies are tender.
Transfer half the soup to a blender and puree. Return to soup pot, stir in cooked rice and Swiss Cheese. Heat for one minute
