Microwave Manicotti Recipe

1/2 pound ground beef
1 1/2 oz. pkg. spaghetti sauce mix
6 oz. tomato paste
2 1/2 cups water
1 cup cottage cheese or ricotta
1 cup shredded mozzarella cheese
1/4 cup Parmesan cheese
1 egg, well beaten
1 T. chopped fresh parsley or oregano or basil
1/4 t. pepper
8 uncooked manicotti

Crumble beef into a 4 cup glass measure. Break up meat during cooking, microwaving on high for 3 minutes. Pour off grease. Stir in sauce mix, then tomato paste and water. Cover with vented plastic wrap and microwave on high for 10 minutes.

To make cheese filing, combine cottage cheese, mozzarella, Parmesan, egg, parsley and pepper. Fill uncooked manicotti using a small spatula, spoon or knife.

Pour half of the heated sauce into a two quart rectangle dish. Arrange filled manicotti in dish and pour remaining sauce over them. Cover with vented heavy duty plastic wrap. Microwave on high 10 minutes.

Using tongs or forks, turn over each manicotti. Spoon some sauce over each. Re-cover and microwave on medium high (70 percent) 15 to 17 minutes. Makes 4 servings of 2 manicotti each.

This is easy and also is great without meat. You can replace sauce mix with your favorite Prego or other prepared sauce.
