2 1/2 c flour
1 1/2 tsp baking soda
1/2 tsp salt
3/4 cup softened butter
1 1/2 c brown sugar
3 c. ripe bananas ( about 7 medium)
1 tsp pure vanilla extract
1 cups nuts ( optional)

Directions:
Directions:
Preheat oven to 325. Grease two 9x5 loaf pans

Combine dry ingredients in a small bowl.
In a large bowl beat butter and sugar. Add eggs, vanilla and bananas. Add flour mixture. Do not over beat. Add nuts if desired.
Pour into baking pans. Bake 60 -70 minutes until done. Test by inserting a toothpick into the center, it should come out clean.
Cool in pan 10 minutes. Remove from pans, cool and slice.
