Dad's Turkey Stuffing Recipe

3 tbsp. onion --- chopped
1/4 c. butter or margarine
4 c. dry bread cubes (about 7 slices cut in 1/2 inch cubes
1/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. poultry seasoning
1/2 tsp. ground sage
2 to 4 tbsp. water or broth (I use giblet cooking water)
Turkey giblets --- very finely chopped or ground
3/4 c. raisins
1 1/2 c. celery --- finely chopped

Directions:
Directions:
1. Saute onion and celery in butter.
2. Combine bread and seasonings.
3. Toss with enough broth to moisten.
4. Add raisins, celery, giblets and butter.
5. Toss again. Cover and refrigerate until just before baking turkey.
6. Before stuffing the turkey, rub cavity with salt.
7. Stuff cavity and front loosely
NOTE: Makes enough for 5 lb. turkey. Double for 10 lb. bird and triple for 15 lb. bird.
I always have more than needed to stuff the bird. Place the remaining stuffing in aluminum foil. Add more broth to moisten a fair amount. Seal the foil tightly and bake for the last hour of turkey baking. Serve with cavity stuffing.
