2 large sweet potatoes, peeled and cubed
2 tbsp olive oil
salt & pepper
small onion, chopped
1 of each, carrot and celery, chopped
2 garlic cloves, minced
1 tbsp fresh rosemary, chopped (1/4 dried(
2 c. chicken or veggie stock

Directions:
Directions:
Preheat oven to 450ºF
Toss potatoes with 1 tbsp olive oil and salt. Roast, 20 mins, stirring occasionally, until tender.
Meanwhile, in soup pot, heat 1 tbsp oil med-high, saute onion, celery, carrot, garlic, rosemary, pepper & salt for 8 mins.
Add stock, roasted potatoes & 4 cups of water, bring to a boil. Reduce heat, cover & simmer 20 mins (stir occasionally)
Let cool slightly, puree.
