Marinade
1 c. water
2 c. beer
4 tbsp oil
1 thinly sliced onion
6 sliced carrots
2 bay leaves
6 peppercorns
2 cloves
1 tbsp allspice
slat & pepper

1 beef roast (butt is good)
2 tbsp brown sugar
2 tbsp flour
cream

Directions:
Directions:
combine all ingredients and marinate beef for three days, in refrigerator, turning meat twice daily.

After marinating, remove meat from liquid, and reserve liquid. Heat oil in a dutch oven, and brown meat on all sides. Add 1 c of the marinade with the veggies. Cover, simmer two hours on low, adding marinade as needed.

Sprinkle with 2 tbsp. brown sugar, and simmer 15 mins. longer, turning meat.

To juice left, slowly add 2 tbsp flour and add to pot. simmer another 15 mins.

Just before serving, strain juice into a second pot. Return veggies to this stock, stir in 2 tbsp. cream, warm and service with meat.
