10 carrots, ( approx. 6 cups) diced into little pieces (about the size of peas)
4 shallots, finely chopped
3 c. fresh or frozen peas
4 tbsp butter
2 tbsp EVOO (extra Virgin Olive Oil)
chopped parsley
2 tbsp dried thyme
salt & pepper

Directions:
Directions:
Heat butter & olive oil in large skillet, add carrots & shallots, cook stirring 10 minutes. Add 1/4 c. water, cook until evaporated. Add chopped parsley, thyme and peas. Stir in salt & pepper. You may also add a little cream cheese at this point if desired.
