l lb. linguine, uncooked
1 c. frozen shrimp raw & cleaned
1/2 can (19oz) diced tomatoes, drained
1/4 c. spreadable cream cheese (any flavour)
1 c. torn fresh spinach leaves (or baby)

Directions:
Directions:
Cook pasta.

Meanwhile in skillet, cook & stir shrimp, tomatoes, cream cheese med-high heat 3-4 minutes, or until shrimp is cooked.

Add pasta, toss in spinach and stir. Add a little pasta water if too thick.

I often use thawed cooked shrimp in this recipe, and change up the cream cheese for goats cheese for a nice tangy taste. The diced tomatoes can be changed up to spicy or Italian style
