Shrimp Scampi with Linguine Recipe

1 lb linguine
12 jumbo shrimp, peeled and deveined
fresh ground pepper
3 1/2 T butter
2 cloves minced garlic
1C sliced mushrooms
2 T fresh lemon juice, plus wedges for garnish
1/2 cup dry white wine (optional), can replace with chicken broth
2 T chopped parsley

Cook linguine according to directions on package.

Meanwhile heat large skillet over med-hi heat. Pat the shrimp dry, then season with salt and pepper. Add 1-1/2 T butter to pan and cook the shrimp until golden on one side, about 3 minutes. Turn the shrimp and add half of the garlic. Cook another 2 minutes. Transfer the shrimp to a plate.

Add the remaining garlic and mushrooms and saute until brown - remove and add to the shrimp plate. Add the lemon juice and wine to the skillet, bring to a boil, scraping up the browned bits with a wooden spoon. Cook until sauce is reduced by half - about 3-4 minutes.

Return shrimp to pan and add remaining butter. Drain pasta and transfer to serving bowl. Toss with shrimp and sauce. Garnish with parsley and lemon
