2 lbs. swordfish steaks
1 small can frozen orange juice concentrate
1/2 c. soy sauce
1 cup parsley
8 cloves garlic

Directions:

1. Dice parsley and crush garlic
2. Combine and place in a shallow baking pan
3. Add frozen orange juice and soy sauce, mix well
4. Marinate fish in mixture overnight, turning several times
5. Barbecue (best) or broil at 410º, 10 minutes per side

Audie Lou was the best hostess in Sierra Madre, second only to my grandmother. This dish makes a great summer meal and should be served with fresh sweet corn, a simple green salad with avocados and copious amounts of champagne.
