2/3 c. sugar
1 c. butter --- softened
1 egg
1/2 tsp. salt
2 tsp. vanilla (OR almond extract)
2 1/4 c. all-purpose flour

Directions:
Directions:
1. Heat oven to 400 degrees.
2. In large mixer bowl combine all ingredients except flour. Beat at medium speed, scraping bowl often, until mixture is light and fluffy, 2 to 3 minutes.
3. Add flour. Beat at low speed,scraping bowl often,, until well mixed, 2 to 3 minutes.
4. If desired,, add the ingredients from the variations listed below.
5. If dough is too soft, cover and refrigerate until firm enough to form cookies, about 30 to 45 minutes. Place dough in a cookie press; form desired shapes 1 inch apart on ungreased cookie sheets.
6. Bake in a 400 degree oven for 6 to 8 minutes or until edges are lightly browned
