1 1/4 cup of cake flour
1 tea. baking powder
1 c sweetened condensed milk
1 c sugar
1/3 c of oil
5 large eggs
1 tsp plus 1 tsp vanilla extract
1 c plus 1/2 c milk
1 c plus 3/4 c heavy cream
1 tablespoon rum (optional)
1 pinch of salt
Optional garnishes: fresh berries or cinnamon.

1. Combine flower and baking powder and salt. 2.In a separate bowl, combine the oil, sugar, and 1 tea of vanilla extract. 3. Add the eggs to the sugar mixture one at a time until well combined. 4. Stir in the 1/2 c of milk, then gently fold in the flour mixture a little at a time. 5. Pour the batter into a lightly greased cake pan or baking dish and bake at 325º for 30-40 minutes or until it feels firm. 6. Let the cake cool to room temperature, then turn it over onto a platter with raised edges. 7. Pierce cake with a fork 20-30 times then let cool in the fridge for another 30 minutes. 8. Whisk together the 1 c of milk, 1 c sweetened condensed milk, 1 c heavy cream, and rum. 8. Slowly pour over cooled cake. 9. Refrigerate for 1 hour and occasionally spoon the milk runoff back onto the cake. 10. In a mixing bowl, add 3/4 c heavy cream, 1 tea vanilla extract, and 1 tablespoon sugar. 11. Beat until peaks form. 12. Spread a thin layer over the cake. 13. Enjoy!
