1/3 cup white wine vinegar
1/2 cup olive oil
2 Tbsp horseradish
1 Tbsp chopped fresh flat-leaf parsley
1 Tbsp chopped fresh tarragon
1 Tbsp Dijon mustard
1 garlic clove, finely chopped
1 1/2 tsp honey
1/2 tsp salt
1/2 tsp pepper

Directions:

Mix together all ingredients. Serve immediately, or cover and chill up to 4 days.
This is especially good over a salad with beets and goat cheese.
