3 Tbsp white wine vinegar
3 Tbsp capers
1/2 cup salad oil
2 tsp sugar
1 tsp dry mustard
1 tsp salt
1/2 tsp dill
1/4 tsp pepper
1/4 tsp paprika.

For the salad:
1 lb. thin-skinned potatoes boiled until tender and then diced into dressing
2 med. apples unpeeled and diced directly into dressing so as not to brown
3 med carrots, thinly sliced
1 small red onion, chopped
1 med green pepper, cut into small strips
1 (1 lb.) can of pickled beets, drained and diced

First make Caper dressing: Stir together 3 Tbsp each of white wine vinegar and capers, 1/2 cup salad oil, 2 tsp sugar, 1 tsp each dry mustard and salt, 1/2 tsp dill and 1/4 tsp pepper and paprika.

Mix all salad ingredients into dressing and cover and refrigerate for at least 6 hours or overnight.
