2 ¼ lb spaghetti squash
1 lb. ground beef or turkey
1 ½ C Fresh Mushrooms – sliced
1 medium red pepper – chopped
1/3 C onion – chopped
3 cloves garlic – minced
½ C sliced green olives
1 tsp Italian seasoning
1 26 oz. jar pasta sauce
1 ½ C grated low fat jack or mozzarella cheese

Preheat oven to 350º
Spray an 11 x 13 baking dish with non-stick spray

Wash squash, cut in half lengthwise and scoop out seeds. Place squash, cut side down, in a glass baking pan with about ¼ inch water in the bottom, cover with plastic wrap. Microwave on high for 10 minutes or until shell can be easily pierced with a knife. Let cool a few minutes until it can be easily handled.

While squash is in the microwave, brown ground meat in a skillet with mushrooms, peppers, onion and garlic. Drain off fat. Add pasta sauce, seasoning and olives to meat.

Scrape cooked squash into prepared pan, spreading evenly over the bottom. Layer ½ of the meat mixture then ½ of the grated cheese, repeat. Top layer should be cheese.

Bake for 30 minutes until bubbly and cheese is melted. Let stand 10 minutes before serving.
