Baked Spaghetti Squash with Meat Sauce Recipe

2 lb spaghetti squash
1 lb. ground beef or turkey
1 C Fresh Mushrooms sliced
1 medium red pepper chopped
1/3 C onion chopped
3 cloves garlic minced
C sliced green olives
1 tsp Italian seasoning
1 26 oz. jar pasta sauce
1 C grated low fat jack or mozzarella cheese

Preheat oven to 350
Spray an 11 x 13 baking dish with non-stick spray

Wash squash, cut in half lengthwise and scoop out seeds. Place squash, cut side down, in a glass baking pan with about inch water in the bottom, cover with plastic wrap. Microwave on high for 10 minutes or until shell can be easily pierced with a knife. Let cool a few minutes until it can be easily handled.

While squash is in the microwave, brown ground meat in a skillet with mushrooms, peppers, onion and garlic. Drain off fat. Add pasta sauce, seasoning and olives to meat.

Scrape cooked squash into prepared pan, spreading evenly over the bottom. Layer of the meat mixture then of the grated cheese, repeat. Top layer should be cheese.

Bake for 30 minutes until bubbly and cheese is melted. Let stand 10 minutes before serving.
