16 ounce can peaches, drained
8 ounces wide noodles
3 eggs
3/4 cup sugar
3/4 cup milk
16 ounce sour cream (regular or light)
16 ounce 1% lowfat cottage cheese
1 teaspoon vanilla
1/4 cup butter
1/2 cup honey nut cereal, crushed
1/2 teaspoon cinnamon

Dice all but 10 slices of peaches and set aside. Boil noodles, drain and rinse with cold water. Beat eggs with sugar, then add milk and sour cream. Add cottage cheese, vanilla and diced peaches and mix well. Add noodles, toss lightly and pour into greased 8x12-inch casserole dish. Melt butter and pour droplets on top. Crush honey nut cereal in food processor. Sprinkle crushed cereal and cinnamon over top of noodles. Arrange peach slices on top. Bake at 350º for 1 1/2 hours until golden brown.
