Jerk marinade:
1/3 c. red onion
4 green onions
1/2 c. olive oil
1/2 c. water
2 limes, juice of
1/4 c. soy sauce
1 jalapeņo pepper, seeds removed
3 cloves garlic
1 c. ketchup
2 T. allspice
1 tsp. nutmeg
1 tsp. cinnamon
2 T. ground ginger
1 tsp. dried thyme

Salsa:
1 c. fresh pineapple, chopped
1 c. fresh mango, chopped
2 T. red onion, chopped
1 T. minced jalapeņo
1/4 c. fresh cilantro, chopped
1/4 c. lime juice
salt/pepper

Chicken

Directions:
Directions:
Place all the marinade ingredients in a blender or food processor, blend well. Marinate the chicken 4-8 hours in the marinade.

Prepare the salsa by combining all the ingredients.

BBQ chicken for the best flavor, basting with remaining marinade. Be careful as the marinade catches on fire easily.
