1 lb sweet banana peppers
4 cups white vinegar
1 1/3 cups white sugar
1 teaspoon mustard seeds
1 teaspoon celery seed
5 pint jars

Directions:
Directions:
Prepare water bath
Sterilize the jars
Wash and remove the seeds from the peppers
Slice the peppers into rings and put into a pan of canola oil
Bring the vinegar, sugar, mustard seed and celery seed to a rolling boil.
Drain the peppers
Place peppers in the 1/2 pint jars
Bring brine to within 1/2" of the top
Be sure the edges of the jars are clean
Seal jars and place in the water bath for 15 minutes
Allow the peppers to rest for at least 4 weeks
