3 eggs
2 c. sugar
1 c. vegetable oil
2 c. grated raw zucchini
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. cinnamon
1 c. walnuts (optional)

Directions:
Directions:
Beat eggs until light and fluffy. Add sugar, oil, zucchini, and vanilla. Combine dry ingredients and add to zucchini mixture. Blend. Add nuts if desired.
Pour into 2- 9x5x3 loaf pans
Bake at 350 for 1 hour
