1-2 Eggplant, Peeled and cut in ½” Thick Slices
1 Egg
1 Cup of Flour
Olive Oil
½ Cup Parmesan Cheese
1 8 oz Pkg Mozzarella Cheese
1 16 oz Jar Pasta Sauce

Directions:
Directions:
1. Beat Egg. Dip Eggplant into egg. Dredge with flour. Cook in olive oil over medium heat for 4 minutes on each side.
2. Arrange 1/3 eggplants in bottom of baking dish. Sprinkle with Parmesan cheese , 1/3 cup mozzarella, 1 cup of pasta sauce. REPEAT. (3 layers). Cover with foil.
3. Bake 375º for 35 minutes. Uncover add Mozzarella Cheese. Bake 10 minutes to melt.
