1 pkg. firm tofu (drained, pressed & cubed)
1 tbsp. minced onion, (soak in 1 tbsp water for 5 min)
1 tbsp. minced ginger root
1 garlic clove, minced
2 tbsp. peanut oil
1 pkg. (16 ounces) broccoli coleslaw mix
1/3 c. peanut butter
1/4 c. reduced-sodium teriyaki sauce
2 c. prepared brown rice.

Directions:
In a nonstick skillet or wok, stir-fry the tofu in oil until browned. Add onions, ginger and garlic; continue to fry until flavors are well blended. Add the broccoli coleslaw mix and stir fry for an additional 4-5 minutes. Combine the peanut butter and teriyaki sauce; stir into coleslaw mix and stir-fry for 1-2 minutes longer or until heated through.

Serve over brown rice.
