1 golden pineapple, peeled, cored and diced
1 small red onion, diced
1 red bell pepper, diced
1 small jalapeņo, membranes and seeds removed and minced
1 tablespoon grated fresh ginger
1/4 cup chopped cilantro
1 tablespoon chopped mint
1 lime, juiced
salt and fresh ground pepper
