4 c. wild rice --- cooked
1 green pepper --- chopped
1 bunch green onions --- chopped
1 basket cherry tomatoes --- halved
1 pkg. frozen peas --- thawed
2 jars marinated artichoke hearts --- drained
1 pkg. old fashioned vinegar and oil dressing mix (mix according to instructions * add liquid from artichoke hearts in place of some of the oil)

Directions:
Directions:
1. Place all ingredients in bowl and mix well.
2. Chill and serve in lettuce leaf or cantaloupe slice.
3. Additional items may be added, but this is a great salad just like it is!
