One package of 24 corn tortillas
Chicken or beef (depending on your mood) cooked.
Half a chopped white onion
One large can of red enchilada sauce put in bowl
Cheddar Cheese – buy the Mexican blend from Costco

Directions:
One 9 x 12 baking dish sprayed with Pam. The prep for the enchiladas is very messy.

Fry corn tortillas one at a time to make them soft. Put the fried tortilla in the bowl with the enchilada sauce. Dunk until the tortilla is coated with the sauce. Place in baking dish this will be your work space. Put a little chicken, cheese and a little onion in the middle of the tortilla. Roll up and move to the end of the pan. Continue this process until you either run out of room in the dish or run out of food. Pour over the enchiladas the remainder of the sauce and sprinkle cheese over it.

Bake about 30 minutes in 350 degree oven.
