3-4 c. frozen spinach, thawed and dried
1/2 c. onion, finely chopped
1/2 c. mayo
one package cream cheese
2 c. shredded Monterey Jack cheese
1/4 c. finely chopped jalapeños with juice
1 can petite diced tomatoes (or 2 small diced tomatoes)
3 T. hot pepper sauce

Mix all ingredients; bake at 350º until the top bubbles. Sprinkle additional shredded cheese on top to make it pretty. Serve with pita chips, tortilla chips, sliced vegetables, or a large spoon!

Everyone loved this recipe at a recent weekend outing with friends. We were in a cabin that didn't have an oven, so I prepared it in the microwave. It was a big hit!

Add extra jalapeños for more kick. Eliminate onions for picky eaters like Erin Johnson.
