4 c quick-cooking oatmeal
2 c brown sugar
1 c canola oil

2 beaten eggs
1 t salt
1 t almond extract (or vanilla or hazelnut or coconut)

Drop cookies from a teaspoon onto a greased cookie sheet or parchment paper. Bake at 325 for 15 minutes.

Mix first three ingredients and store in covered container overnight...do not refrigerate. Next day add remaining ingredients. Drop by tsp. onto greased cookie sheet or parchment paper. Bake at 325 for 15 minutes. Cool on rack.
