1 1/4 cups flour
Pinch of salt
3 eggs
1 1/2 cups milk
2 tablespoons melted butter
1 tablespoon sugar
1 teaspoon vanilla

Put everything in a blender and mix well. If you can, let the batter sit for 30 minutes to an hour before making the pancakes. They'll be easier to handle.

I usually double this recipe. The recipe will also work if you use fewer eggs. Grandma Vera never used so many eggs in her Swedish pancakes because eggs were expensive, and she grew up poor.

For some reason, the "kid" generation (as opposed to"grandkid" generation) seems to get competitive about who can eat more Swedish pancakes. Nathan once bragged to John that he could out-eat him two to one. He had to eat 21 pancakes in order to win. He reports a painful stomach after that; however that memory did not keep him from digging right in the next time. We usually had these for Sunday night supper when my boys were growing up.

Christina is among those who have eaten more than 12 at a single sitting. This fact must prove that the pancakes are not fattening.
