Pastry for two-crust pie
1 cup sugar
1/4 cup flour
1/2 teaspoon cinnamon
4-6 cups fresh apricots, quartered or sliced
3 tablespoons butter
sugar to sprinkle over top of pie

Directions:
Directions:
Get the ripest apricots you can find. Make a friend with an apricot tree if you can. Wash and pit the apricots, and cut them up.

Line a 9" pie plate with pie crust. Dump in the apricots. Mix the sugar, flour, and cinnamon and pour evenly over the fruit. Dot the butter over all.

Cover with the top crust. Cut slits in it. Sprinkle sugar over the crust. Bake at 425 for 35 to 45 minutes, or until the crust is nicely browned and juice bubbles through the slits. Serve slightly warm.

This recipe works for fresh peach pie too.
