2 tablespoons cornstarch
1 cup sugar
1 cup water
2 egg yolks, slightly beaten (use the whites for the meringue)
Juice of 2 lemons--1/4 to 1/3 cup (Meyer lemons are the best!)
Lump of butter (about 2-3 tablespoons)

Directions:
Directions:
Mix the sugar and cornstarch in a saucepan. Stir the water in gradually. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 minute.

Slowly stir about half the hot mixture into the egg yolks in a separate container. Blend that mixture back into the hot mixture in the saucepan. Boil 1 minute longer, stirring constantly.

Remove from heat. Continue stirring until smooth. Blend in the lemon juice and butter.

Pour into a baked pie shell. Cover with meringue. (Get a meringue recipe online or from a cookbook.) Bake at 400 until a delicate brown. Serve as soon as it is cool.

Grandma Vera and Grandpa Warner used to have a Meyer lemon bush outside their front door. Grandma made good use of those lemons!
