4 extra large orange sweet potatoes
1 can frozen non-pulp orange juice
1/2 cup brown sugar
1/2 stick butter or margarine
1/4 cup crushed walnuts (optional)

Directions:
Directions:
Bake the sweet potaoes in 350º oven until soft apx. 1 hour. Remove from the oven and open the potatoes and scrap the guts out of the skin and place in a bowl. Bend with a mixer all the other ingredients. Top with the walnuts if you'd like.
