2 Pkgs. (10 oz. Each) Frozen Chopped Broccoli
1 Cup Water
½ Cup Diced Celery
1 Onion, diced
½ Cup Butter or Margarine
½ Cup Flour
2 Egg Yolks Beaten
1 ½ Quart Chicken Stock or Clear Broth
1 Cup Half & Half, or Milk
½ Tsp. Salt
Pinch of Pepper
Pinch of Paprika

Directions:
Directions:
Cook broccoli in water 3-5 minutes, save liquid. Saute onion and celery in butter. Then stir flour in. Gradually add stock and liquid from broccoli. Stir constantly until thickened. *Add broccoli* Stir egg yolks into half and half or milk, gradually add to soup. Do Not Boil.
Season with salt and pepper, garnish with paprika.
