I know we have several banana bread and banana muffin recipes in our cookbook, but Katie requested that I add this. This recipe came from my neighbor Diane who lived across the street from us when were in our first house, so I have been making it for nearly 40 years.
If you have only 2 bananas, you can substitute 1/2 cup of applesauce. Dried fruit, blueberries or nuts can be added.
