Pastry for double crust Pie
3/4 to 1 C sugar
1/2 tsp cinnamon
1/4 tsp salt
1 tsp grated lemon zest
2 Tbsp flour
6 C pared, sliced apples
1 Tbsp lemon juice
2 Tbsp butter

Directions:
Directions:
Preheat oven to 450º
Combine, sugar, cinnamon, salt, lemon zest, and flour in mixing bowl. Arrange apples in layers in 9 in pastry lined pan, sprinkle cinnamon sugar mix over each layer. Sprinkle with lemon juice. Dot with butter. Place slits in top crust and place over pie, fold edge under and seal. Flute edges.
Bake at 450º for 10 min then at 375 for 40 to 50 minutes, until apples are tender. Serve with creme sauce;
Combine 2 slightly beaten eggs, 1/4 C sugar, and 2 Tbsp lemon juice in sauce pan. Cook stirring constantly until thick. Add 3 oz softened cream cheese and 1/2 C sour cream.

My best apple pie recipe, found in the 70's and used consistently. The creme sauce makes it special.
