2 tbsp. oil
1 onion chopped
2 tbsp. each cider vinegar & chicken stock
1 tbsp. curry powder
1 tsp.brown sugar
1/2 tsp. salt & cumin
pinch cinnamon
2 c frozen peas
1/2 c diced red & green pepper
1/4 c raisins
1 c couscous
1 1/3 c water

For couscous: In non-stick skillet, cook couscous over med. heat stirring frequently for 5-7 min. until lightly browned. Remove from heat. In saucepan bring chicken stock to boil; add couscous. Cover and let stand for 5 min.; fluff with fork.

Meanwhile in saucepan heat oil; cook onion for 3 min until softened. Stir in vinegar, 2 tbsp.chicken stock salt and spices. Add to couscous along with peas,peppers and raisins; toss gently.
