1 lb split peas Green
10 c water
1/4 c bacon
1/2 c chopped leaks
1/2 c diced carrots
1/2 c chopped onion
1/8 tsp. thyme
bay leaf
2 tsp salt ( or less)
1 ham bone
1 1/2 tsp sugar
1 tbsp butter

Directions:
Directions:
Cover and soak peas. Cook bacon 5 min. Add leeks, carrots, onion and cook until soft. Add to peas and water. Add ham bone and seasonings. Cover and boil, reduce heat and simmer 2 hours. Remove bone, strain, and blend 1/2 of soup to leave some chunky.
Add sugar and butter and 1/2 c cream if you like.
