1 1/2 lb. boneless pork loin, cut in cubes
1 (8 oz.) can pineapple tidbits (undrained)
1 medium red or green bell pepper, squared
3 T. brown sugar
1/2 tsp. ginger
1/4 cup vinegar
3 T. soy sauce
2/3 cup uncooked white rice
1 1/3 cup water
3 T. water
2 T. cornstarch

Directions:
Directions:
Combine pork, pineapple, pepper, brown sugar, ginger, vinegar, and soy sauce; mix well. Cover; cook on LOW 6 to 8 hours. Just before serving, cook rice as directed on package. Combine water and starch and mix into stir-fry; cook on HIGH till thick and bubbly.
