2 cups flour
2 tsp. baking soda
2 tsp baking powder
2 tsp. cinnamon
1 tsp. salt
1 ½ cups oil
2 cups sugar
3 cups grated carrots
4 eggs
1 cup chopped nuts


Creamy Frosting for Carrot Cake

1 8 oz. cream cheese
1 box powdered sugar
1 stick butter
2 tsp. vanilla

Directions:
Directions:
Sift dry ingredients. In a mixer add the carrots, oil, and dry ingredients. Beat in the eggs 1 at a time.

Bake at 350 for 30 minutes (layers) or longer if using a 9x13" pan.

Frosting: Beat all ingredients together and ice cake.
