1 pie crust shell, baked
4 cups strawberries, divided
3 tablespoons cornstarch
1 cup sugar
2 tablespoons lemon juice (fresh, frozen, or canned, but fresh is best)
Sweetened whipped cream for garnish

Ansley’s pie crust recipe can be baked into two single-crust 9-inch pie crust shells (prick a lot of holes on bottom and sides and bake at 475 degrees 8 – 12 minutes, or until golden). Use just one of the pie crust shells for the recipe below (or double the filling recipe).

For the filling, crush 2 cups strawberries in a medium saucepan. Add the cornstarch, sugar, and lemon juice.

Cook mixture over moderate heat, stirring, until clear and thickened. Cool.

Slice 2 more cups of strawberries. Fold the berries into the cooled mixture and dump the whole thing into the crust. Refrigerate until well chilled. Garnish with whipped cream before serving.

I found this recipe in an old Good Housekeeping cookbook many years ago. It works for all kinds of berries.
