Whole roaster chicken
Butter
Salt and pepper
Seasonings

Wash the chicken under cold water and remove anything in the cavity. Pat dry and salt cavity if desired. Place in a shallow baking dish. Rub with butter and season with salt and pepper. Other seasoning may include sage, thyme or paprika. Bake at 350º for 20 t0 30 minutes. Reduce heat to 325º and cover chicken with tented tin foil. Bake approximately 20 minutes per pound. Uncover the last half hour to brown the skin if needed.
