2 Tbsp butter
8 oz. Gorgonzola cheese, coarsely crumbled
5/8 cup heavy cream
2 Tbsp dry white wine
1 tsp cornstarch
4 fresh sprigs of sage, finely chopped
12 oz. package of fettucine or any hearty long pasta
2 Tbsp olive oil
Salt and pepper
1 fresh sprig of sage to garnish

Directions:

Melt the butter in a heavy bottomed sauce pan. Stir in 6 oz. of the Gorgonzola cheese and melt for about 2 minutes. Add the cream, wine and cornstarch and beat with a wooden spoon until blended. Stir in the sage and season to taste. Bring to a boil over low heat, mixing constantly until the sauce thickens. Remove from heat. Cook past al dente, drain and toss in olive oil. Warm the sauce over low heat if needed. Spoon over pasta and garnish with remaining cheese and sage sprig.
