1 medium onion
3 cloves garlic
2 carrots peeled and chopped
4 c acorn squash or butternut,seeded and chopped
2 tbsp margarine
1 tsp. curry powder
1 tsp cumin
4 c water
3 tsp chicken bouillon
chopped parsley optional
1/4 tsp hot sauce

Directions:
Directions:
Saute the onion,carrot,squash and garlic in margarine for 5 min. Stir in curry and cumin and cook for one more min. Add water and oxo; bring to boil. Reduce heat and simmer for 25 min or until vegetables are tender. Puree in blender until smooth. Stir in parsley if using and hot sauce. Season with s&p to taste.
