1 med. potato, diced
1 med. onion, cut in small pieces
1 dozen baby carrots, cut in small pieces
1 stalk of celery, chopped
1/4 c. chopped bell pepper
1 c. of corn, fresh or frozen
1 small amount of French cut green beans, to taste
1 c. of shredded cabbage
1 can petite tomatoes
1/2 c. macaroni
fresh okra if desired
1/2 stick margarine
Salt and pepper to taste

Cook potatoes, celery, onions, carrots, pepper covered with a good amount of water until tender. Add tomatoes and corn, bring to a boil and boil for 10 to 15 minutes. Add cabbage, boil for about 10 minutes. Add macaroni, (and okra if desired) and continue cooking for 30 to 40 minutes, stirring to keep macaroni from sticking. Serve with cornbread.

This recipe makes about a gallon of soup. Use fresh vegetables if in season, or you can use canned mixed vegtables. Add more or less of vegetables, whatever suits your family. This freezes well too.
