1 cup sugar
1/2 cup light corn syrup
1 cup Spanish or roasted, salted peanuts
1 teaspoon butter
1 teaspoon vanilla
1 teaspoon baking soda

Directions:
Directions:
Combine sugar and corn syrup in a 11/2-quart casserole. Microwave on high for 4 minutes. Stir in peanuts. Microwave on high an additional 3 to 5 minutes, until brown. Stir in butter and vanilla. Microwave 1 to 2 minutes longer. Peanuts will be lightly brown and syrup very hot. Remove form microwave. Add baking soda, and stir gently until light and foamy. Pour mixture onto a greased cookie sheet and let cool 30 minutes to 1 hour. When cool, flex sheet to remove brittle, then break into small pieces. Store in airtight container.
PECAN OR CASHEW BRITTLE
Omit peanuts and add 1 cup pean halves or 1 7-ounce package dry roasted cashews

Every microwave is different so be careful of the times. I do 21/2 minutes for the first time and 3 minutes after I add the peanuts.
