1 4lb Pork Spoon Roast
1/2 c flour
2 10 oz can Diced tomatoes and green chilies
1-2 4 oz canned diced green chilies
1 onion finely diced
1 jalapeno chili, minced (optional)
4 garlic cloves, minced
1 tsp cumin
1 T Taco seasoning or 1 heaping tsp Mc Cormick Mexican Seasoning
grated cheddar cheese
1 can green enchilada sauce
Tortillas

Directions:
Directions:
Roll roast in flour, coating heavily. Place in crock pot and sprinkle any unused flour over the top. Mix all remaining ingredients (except cheese, sauce, and tortillas) in a bowl. Mix well and pour over roast. Cook in crock pot on high for 6 -8 hours or low at least 12 hours. When done break up roast with tongs and serve rolled in warm tortillas. Can add grated cheese and serve with heated enchilada sauce.
