1/2 bushel of large ripe tomatoes
3 medium yellow onions
1 medium purple onion
6 sweet peppers (banana peppers)
1 head of garlic
2-3 bell peppers
1 bunch of basil (1/2 c. chopped)
1 bunch of cilantro (1/2 c. chopped)
1/2 c. chopped jalapeņos (6-8 pepper)
1 tbsp. dried oregano
1 tbsp. black pepper
2 tbsp. sea salt
2 tbsp. cumin
1 c. white vinegar
1 c. apple cider vinegar
1 c. white sugar
6-8 fresh peaches

scald and peel tomatoes and peaches
chop and process all ingredients to desired texture
combine in large pot
bring to boil, stirring to prevent burning, reduce heat to medium and simmer for 2-3 hours or to desired thickness

proceed to desired method of preserving - freezing or canning

I first made this in fall of 2008 while tomatoes and peaches were at their peak in Brigham City Utah. I can down an entire quart in one sitting. This salsa is well worth the day of shopping, chopping, stirring and cleaning.
