1 Green Bell Pepper (Chopped)
1 Small Onion (Chopped
1T Olive oil
3 Cups Cooked Chicken (or debone a Roasted Chicken)
2 32 oz Boxes of Chicken Broth
1 Can Black Beans (Rinsed)
1 Can Corn
1 Can Diced Tomatoes
1 Can Rotel
˝ -1t Cumin
1 Lime
Fresh Cilantro, Lime Juice, Shredded Cheddar, Sour Cream
Thin Tortilla Chips

Directions:
Directions:
1. Sauté peppers and onions in Oil; add Chicken; add Broth, Beans, Corn, Tomatoes, Rotel and Cumin.
2. Squeeze in Juice of Lime just before serving.
3. Garnish with Cilantro, Lime Juice, Cheddar Cheese, Sour Cream and chips.
Serves 10-12
