1 lb. long grain rice
1 1/2 lbs. meat loaf mix (ground beef, pork,veal)
4 oz. tomato paste
1/4 cup pignoli nut(optional)
/salt and pepper to taste
6 large eggs
1/2 to 3/4 cup grated pecorino-romano cheese
1 (12oz) can seasoned bread crumbs
Canola or veg. oil for frying

Directions:
Directions:
Cook rice according to package directions. Set aside in a large bowl and let cool enough to handle
Fry meat mixture until cooked through and drain off any fat. Add just enough tomato paste to moisten the mixture
Add the pignoli nuts, salt and pepper to taste and simmer for about 10 minutes. Remove and sat aside.
In a separate bowl, mix rice and grated cheese.Add the eggs one a time and continue mixing. You want the rice moist but not too wet, it has to stick together. Form the rice balls in the palm of your hand creating a bowl effect.Spoon meat mixture in the center and top with some rice mixture and form a ball. Roll the ball in the bread crumbs to coat. Put in refrigerator for about and hour to set up. Put oil in deep frying pan and fry till golden brown. Remove and drain on paper towels.Serve with your favorite tomato sauce.
