1 (8 oz.) pkg. cream cheese
1 (4 oz.) pkg. blue cheese
1 1/2 sticks margarine - softened
1 T. lemon juice
2 T. onion - finely chopped
1 c. ripe olives - drained and chopped
2 T. fresh parsley - minced
1/2 c. pecans - finely chopped

Directions:
In a medium bowl, mix the cream cheese, blue cheese, and margarine together until well blended. Add the lemon juice, onion, and olives; stir to blend and set aside. Toss together parsley and pecans. Put mixture in fridge for a little bit to chill and make shaping easier. Shape cheese into a ball and roll in parsley and pecan mixture. Wrap in plastic wrap and refrigerate until ready to serve.

Before shaping any cheese ball, chill the mixture in the fridge for a short time to cool and set. This will make the mixture less tacky and easier to work with when shaping.
