boneless chicken

1 purple onion
1 red pepper
1 yellow pepper

1 jar apricot jam
3/4 cup ketchup
2 tsp brown sugar

1. cut boneless chicken into strips
2. coat with flour, lay in a single layer in a large
roasting pan
3. bake uncovered at 350 for 40 minutes
4. meanwhile, sautee onions and peppers on the
5. combine sauce ingrediants and mix well
6. add sauteed vegetables to sauce
7. when chicken in done, cover with sauce and
return to over for 20 more minutes
